Valerio started cooking at the age of 10 years old, and he carries on the family tradition of great chefs: he was learning how to cook from his Mom and grandmom who were excellent cooks. The main principle in the family kitchen has always been highest quality of products.
Valerio studied in hospitality school and then worked in different countries in Europe including several 5 star hotels – Rocco Forte in Rome, in Cardiff, in London. Then he worked in Spain several years, and upon returning to Italy he was introduced to Andrea Accordi. Valerio’s ambition was to work in the hotel again and be exposed to Michelin star environment.
Together with Andrea he worked in Four Seasons Prague and moved to St. Petersburg to be the Chef of Percorso.
Valerio says, “I want to bring here the authentic flavor. I am very critical about Italian food that I try anywhere. I also like to do something new when creating dishes – start with basic flavour and enhance it with unexpected twists. And I love to take care of my guests. Quality is crucial, and guests appreciate it a lot."
